We repeated the “re-brewing” process of brewing more sake with the brewed sake.
The aroma is like kneaded caramel and the taste is rich.
We have adjusted the number of times of re-fermentation to brew the characteristics of Yashioori while keeping it refreshing and easy to drink.

Yashiori (special brewing)
Shimane is said to be the birthplace of sake, as described in “Kojiki”, “Nihonshoki” and “Izumo Fudoki”.
The myth of Susanoo-no-Orochi’s defeat of Yamata-no-orochi in the Chronicles of Japan. We wanted to reproduce this “Yashiori no sake,” which is related to the history and origin of sake and is set in our hometown Shimane, so we repeated trials and took a unique approach to reproduce it.
It is an extremely rare gem that has been brewed and pressed with sake, and then re-brewed many times over the years without any concentration adjustments.
