■Brewer’s (Toji’s) comments on the award-winning products
The Kokki Obi label series “Kokki -BLACK-” and “Kokki -PURPLE-” have been awarded the Silver Medal at IWSC 2023.
We are very happy because we developed these products while working hard on the Corona disaster.
The label for the Obi Label Series was created in consultation with the weavers, using textiles associated with the costume of the priests and the kimono belt, which are symbolic of Matsue.
The taste is a gem developed based on the concept of a mid-meal sake with a short aftertaste and low alcohol content, which makes it easy to enjoy the next sip or meal.
The award-winning BLACK is a new concept of sweet sake from dry sake maker Kunitake Shuzo.
The fruity ginjo aroma is subtly fragrant and the clear, crisp taste makes it an excellent choice for pairing with a variety of dishes.
Please enjoy it with a special meal with your loved ones.
PURPLE has a clear, fruity ginjo aroma, a refreshing sweetness and a well-balanced acidity.
Please enjoy the highest quality.
We will continue to listen to your opinions and continue to evolve through further research and development.
From Matsue, from Sanin-Shimane to the rest of the country and to the world.
We hope that we will be able to transmit information not only about our products, but also about our history and culture, so that people from all over the world can get to know Matsue.
3.About the Kokki Brewery
We at Kokki Sake Brewery make full use of the techniques of the Izumo Toji tradition and are thoroughly committed to handcrafting.
We use a lot of locally grown ‘sake rice’ from Shimane Prefecture for our rice, and adjust the rice-washing time down to the second, taking into account optimum koji, steaming and withering.
The brewery overlooking Lake Shinji is a storehouse of the Matsue clan’s Matsudaira family, which has been relocated and remodelled, and the sake that has been brewed under a beam of several hundred years gives today’s Kokki its taste.
