History of the Kokki Brewery
The Reimei cooling system was introduced in 1962 at Kokki Brewery.
This was an advanced system at a time when there were no jackets or anything else.
Each fermentation tank is individually enclosed in a refrigerator on all sides to control fermentation.
With this system, Kokki Brewery established a unique brewing method that used well-fermented water and well-fermented yeast, and controlled the fermentation with precise temperature control.
