Evolution of sake brewing in Shimane! A new brand is on sale from Kokki Sake Brewery in Matsue City, the city of water!

Kokki Sake Brewery Co., Ltd. (Location: Matsue City, Shimane Prefecture, Representative Director: Hiroki Iwahashi) will launch a new brand developed with the theme of cultural tradition and innovation from September 1, 2021.

■About Kokki Sake Brewery

Kokki Sake Brewery Co., Ltd. is located in the eastern part of Shimane Prefecture, and in front of us is Lake Shinji, which has been selected as one of the 100 most scenic spots in Japan.

■The taste that Kokki Sake Brewery aims for

However, in recent years, companies around the world are undergoing DX, and the nature of companies is undergoing drastic changes. With a sense of crisis that corporate value will be lost without further evolution of sake brewing and the inheritance of good old Japanese culture, I keenly felt the need to continue to be a company that changes and evolves with the times.
For this reason, we focused not only on “sake brewing” but also on marketing, etc., and through SNS, we conducted a survey of thousands of consumers while disseminating the sake brewing of Kokki Brewery to the world.

For the new product to be released this time, in order to take on new challenges, we have renewed the traditional production method, repeated trial brewing with low-temperature aging over many layers, and made many mistakes.
First of all, we aim to evolve further from “Junmaishu THE KOKKI”, which was released in May 2021. We set the highest quality as our guideline, and above all, we believe that the most important thing is to create a sake that customers with various needs can say is “delicious.” As a result of aiming for a sake with a more fruity aroma, a well-balanced sourness, a refreshing sweetness without being overpowering, and a refreshing aftertaste, we have created a taste that can be enjoyed over and over again in any situation.

■About packages and products

As an inheritance of the good old culture that Japan boasts to the world, we repeated trial and error with textile craftsmen for several months in order to realize a collaboration between the textile technology of “Kyoto Nishijin textile”, which is designated as a traditional craft, and sake from Kokki Shuzo.
We have developed a label with the image of an elegant kimono obi that is unique to Nishijin textiles, so that sake and Japanese culture can be loved not only in Japan but also around the world.
